Gin and Elderberry

 
So we were at the Whāngarei Markets this morning (buying fruit for school lunch boxes for next week) and I spotted some Elderberries (thank you!).
So made this little one...
Gin and Elderberry
50ml gin
25-50ml elderberry syrup (just simmer sugar with water and elderberries, then leave to cool and strain)
Squeeze of lemon
Pour in glass full of ice and top with soda water.
