Madrean Punch
Serves 10
300ml Papaka Road gin- Classic or Barrel Aged
100ml liquid honey
75ml fresh lemon juice
6 dashes Peychaud’s Bitters
Small handful of sage leaves (pineapple sage would be awesome but I only had normal sage in the garden
More sage leaves and edible flowers (optional), to serve
Put all ingredients in a punch bowl and leave, covered, in the fridge for about 30 minutes to steep. Remove the bowl from the fridge, give it a quick stir and add ice - about 3-4 cups worth. Finish by garnishing with more sage leaves and edible flowers if desired.
