Serves 4
250g fresh strawberries, trimmed and quartered (set aside 1/4c)
1 Tbsp of vanilla syrup (or 1 tbsp caster sugar and 1/4 tsp vanilla)
120ml Papaka Road Raspberry gin
500ml rose sparkling wine
12 small scoops vanilla icecream
1/3c crushed Krispie biscuits
1/4c cut up strawberries, to garnish
In a large bowl, combine strawberries and vanilla syrup.Set aside for 30 minutes to macerate.
Spoon half the strawberries into the base of 4 coupe glasses, then pour over the gin, and the sparkling wine. Top with layers of ice cream, strawberries and crushed biscuits.
Finish with the strawberries to garnish.
Note: for the little underage people in my life, I replaced the gin and sparkling rose, with lemonade 🥰
